Pea starch

Pea starch is a starch powder derived from yellow or green peas, rich in amylose and amylopectin, white to slightly cream in color, with neutral taste and odor. It is characterized by its ability to form firm, clear to semi-clear gels, good resistance to high shear and elevated temperatures, and suitability for clean label and plant-based declarations. In the food industry, pea starch is used as a thickener, texture stabilizer, filler, and binding agent in various products, often as an alternative to cereal or modified starches.

Source

Pea starch is obtained from:

  • dry peas (typically yellow peas),

by:

  • cleaning and milling the seeds,
  • separating the starch fraction from proteins and fibers (wet process),
  • washing, sedimentation, and concentration of starch,
  • drying and milling into a fine powder.

The result is a native, gluten-free plant starch with functionality suitable for a wide range of food applications.

Variations

Pea starch is available as:

  • native pea starch (basic gelling and thickening functionality),
  • physically or chemically modified pea starch (improved process, freeze–thaw, and acid stability),
  • instant (pregelatinized) pea starch for cold preparation.

Selection depends on processing conditions (hot or cold application) and required texture and stability.

Applications In The Food Industry

Bakery Industry

In bakery products, pea starch is used for:

  • improving structure and moisture retention in breads and pastries,
  • formulating gluten-free products (breads, pastries, cakes),
  • fillings and creams requiring a firmer structure without cereal ingredients.

It contributes to a more stable, less crumbly structure and extended freshness.

Dairy Industry

In dairy and plant-based alternative products, pea starch is used for:

  • thickening and gelling puddings, dairy and plant-based desserts,
  • syneresis control in yogurts and cream cheese-type products,
  • improving body in plant-based drinks and creams.

Thanks to its neutral taste, it does not interfere with flavor profiles while delivering the desired texture.

Frozen Foods Industry

In frozen foods, pea starch:

  • stabilizes sauces and fillings in ready meals,
  • improves texture of frozen desserts and semi-finished products,
  • reduces syneresis after freezing and thawing.

It is particularly suitable for clean label frozen meals and vegetarian/vegan products.

Savory Foods Industry

In savory products, pea starch is used for:

  • soups, cream soups, and sauces,
  • plant-based and meat products (e.g. burgers, minced products) as a binder,
  • snacks and extruded products to control expansion and texture.

It enables the desired thickness, juiciness, and structure without gluten-containing components.

Benefits Of Use

  • plant-based, gluten-free starch source suitable for clean label and vegan products
  • strong gelling and thickening ability with firm, stable gels
  • neutral taste and color with minimal impact on product flavor
  • resistance to cooking and mechanical stress, and in modified forms to freeze–thaw cycles
  • potential replacement of cereal and modified starches across a wide range of applications
