Lactose
Lactose is a disaccharide milk sugar composed of glucose and galactose, naturally present in milk and dairy products. In the food industry it is mainly used as a white, crystalline powder with a neutral odour and mildly sweet taste (about 20–30% of sucrose sweetness). It is stable under typical processing temperatures and pH ranges for most food products, making it a reliable technological ingredient functioning as a filler, flavour carrier, texture modifier and mild sweetener.

Industrial lactose is obtained from whey and whey permeate, which arise as by-products of cheese and other dairy manufacturing. The process typically includes:
- concentration of whey or permeate,
- lactose crystallisation,
- separation of crystals and drying.
