Sodium Benzoate

Sodium benzoate is the sodium salt of benzoic acid (food additive E211), a highly water‑soluble and effective preservative with a mild, slightly salty taste. It acts primarily as an antimicrobial agent against yeasts, molds, and certain bacteria in acidic environments, which is why it is widely used in the food industry to extend shelf life and ensure microbiological stability.

Origin and Source

Sodium benzoate is industrially produced from benzoic acid, which is obtained by chemical synthesis (oxidation of toluene) or from natural sources rich in benzoic acid (e.g. certain berries, cinnamon, cloves – mostly as a reference “natural equivalent”).

Neutralization of benzoic acid with sodium hydroxide yields high‑purity sodium benzoate – stable, easy to dose, and suitable for use as a food preservative.
